This Order establishes veterinary and sanitary standards and methods for determination of the contents of easily soluble nitrogen in fish products. Unprocessed fish products shall be considered unusable for public feeding if the contents of easily soluble nitrogen exceeds the following values: (а) 25 mg nitrogen/100 g of the fish species Sebastes sp.; Helicolenus dactylopterus, Sebastichthys capensis; (b) 30 mg nitrogen/100 g of the fish species Pleuronectidae (except for Hippoglossus sp.); (с) 35 mg nitrogen/100 g of the fish species Merlucciidee и Gadidae. The main method for determination of the contents of easily soluble nitrogen shall consist in distillation of extract obtained after removal of albumen with the use of perchloric acid.
